200g salad (new) potatoes, diced
1/2 leek, sliced
1 tsp oil
2 smoked bacon medallions, chopped
1/2 tsp smoked paprika (optional)
good handful baby spinach (optional)
Cook the potatoes and leek in the oil for about 10 minutes, until the potatoes are cooked through.
Add the bacon, and paprika and spinach if using, and cook for another few minutes until the bacon is cooked and the spinach wilted.
Delicious with a fried or poached egg.

just tried this and i got to scrap it and think of something else now, potatoes were still raw and leeks were burnt Left by: ann (27 Nov 2015)
this was one of my first things i cooked, it was tasty, but leeks were burnt as must have cut them to thin and potatoes were not cooked, Left by: joanne (1 Oct 2012)

Omg. I thought this recipe was going to be bland and tasteless as we dont really like paprika. I used black peppercorns instead for a bit of a kick and boy did that work. Never had spinach so put that in too...Result was amazing.. Im on slimming world so omitted the oil and used virgin frylight...Scrummy!!!! Left by: Bev (31 Dec 2011)
