Chicken with pineapple: Submitted by: admin | Date Added: 11 Jan 2011
Listed in: Main Courses

• 600 g (1 lb 5 oz) skinless boneless chicken breasts, cut into thin strips (about 1 cm x 3 cm/1/2 x 11/4 in)
• 1 spoon cornflour, plus extra to coat the chicken strips
• Salt and freshly ground black pepper, to taste
• 2 spoon sunflower oil
• 1/2 spoon ground ginger
• 1/2 spoon mild curry powder (or choose medium, if you prefer)
• 250 g (9 oz) canned pineapple pieces (drained weight) in natural juice, drained (reserve the juice)
• 2 spoon light soy sauce
• 250 ml (9 fl oz) cold water
• 1/2-1 spoon light soft brown sugar, or to taste
• 2 spoon reserved pineapple juice

Cooking Instructions

In a large bowl, lightly coat the strips of chicken with a mixture of cornflour, salt and pepper. Place the chicken in the ActiFry pan, then drizzle the oil evenly over the chicken. Cook for 5 minutes.

Mix the ground ginger, curry powder and pineapple pieces with the soy sauce in a bowl, then pour this mixture evenly into the ActiFry and leave to marinade for 5 minutes. Add the water and sugar. Mix 1 ActiFry spoonful of cornflour with the pineapple juice in a small bowl, until smooth. Add this to the ActiFry.

Cook for a further 10 minutes, or until the chicken is cooked and tender. Serve with cooked, seasoned basmati rice

Delicious Left by: Regina (6 Aug 2013)

This was the first recipe we tried in our new Actifry, it was amazing. We used fresh pineapple instead of canned, and boneless chicken thighs instead of breast. It was delicious served on a bed of jasmine rice. Left by: Maggy (23 May 2013)

Just got my ActyFry and am looking at the dishes which look delicious. Only problem is that some of the comments use the term &amp. Help! Left by: Glyn Bloy (23 Nov 2012)

This is good, but lacks color. I added some thinly julienned red, green, and orange peppers with the pineapple. I also cut the chicken into 1-1/2 inch cubes instead of strips, which kept it extra tender. I agree, use the reserved pineapple juice instead of water for the marinade. Delicious. The person who asked what is the size of the spoon, it is the green spoon that came with your actifry .... Left by: Denise (27 Feb 2012)

This recipe turned out very nice, Iwas very surprised. I used the left over pineapple juice and add the water to make a cup. I added a bit more of curry powder because I love it and it make the result even more golden yellow. Try it, you won't be disapointed. Left by: Denise (27 Feb 2012)

Just cooked this for dinner. I had to bulk it up as it was for 4 so I added chopped carrots and baby corn and onion. I also used the juice from the pineapple chunks instead of water. I used 3 times the curry powder to spice it up! It was bloody lovely! Great, beautiful and tasty recipe. Yum! Thanks! Left by: Lucy (20 Feb 2012)

Only just got my actifry and made this as the first recipe. it was gorgeous and can't wait to try some more tomorrow;-) Left by: Ruth (2 Sep 2011)

I bought my Actifry about 18 months ago & have only ever used it for chips! Saw it being advertised on Price Drop TV or some shopping channel yesterday & decided it's quite an expensive chip cooker so tried this recipe. It took about 40 minutes from washing the chicken to serving up & is absolutely delicious. Made more appealing knowing it's a low fat meal too. I'm going to try Chicken Tikka Massala next & definitely make more use of it than just chipped potatoes. Left by: Emma (29 May 2011)
