1 small onion, chopped
1 medium red pepper, chopped
1 ActiFry spoon olive oil
1 pound of lean ground beef
2 teaspoons ground cumin
1 teaspoon ground coriander
1 28-ounce can of fire-roasted crushed tomatoes
½ cup water
1 canned chipotle chili in adobo sauce, seeded and minced (about 2 teaspoons), plus 1 teaspoon of the sauce
½ teaspoon dried oregano
One 15.5 ounce can of black beans, preferably low sodium
Salt and freshly ground pepper, to taste

Cooking Instructions

Place the onion and pepper in the ActiFry pan, drizzle with oil and cook for 6 minutes.

Crumble the beef into the ActiFry pan. Add the cumin and coriander and cook for 5 minutes, until the meat is browned.

Break up any large pieces of browned meat with a wooden spoon.

Add the tomatoes, ¼ cup of the water, chipotle with adobo sauce, and oregano and cook for 25 minutes.

Add the beans and the remaining ¼ cup of water and cook for 10 minutes more. Season with salt and pepper to taste.
