Ginger Beef and Vegetable stir fry for 2: Submitted by: Bruce Wilson | Date Added: 19 Dec 2011

1 Pound Top Sirloin Steak Cubed (or whatever cut you like)
1/4 cup flour
1/2 Tablespoon of your favorite ActiFry oil (I use Safflower)
1/2 Teaspoon Sesame Oil (optional)
1 Clove Garlic Chopped

1 Celery Stalk sliced Diagonally
1 Medium Red Pepper Sliced
1 Medium Yellow Pepper Sliced
1 Small Red Onion Sliced
1/8 cup Fresh Ginger Root peeled and cut into fine slivers
1 Tablespoon of your favorite ActiFry oil
1 Medium to Small Carrot Grated Length wise

1/2 cup low sodium Beef Broth
1 Tablespoon Soy Sauce
1/4 cup Sweet Chili Sauce
1/8 teaspoon cayenne pepper
1 Tablespoon corn starch and 3 tablespoons water mixed well

Cooking Instructions

Add the oil(s) to ActiFry and preheat 1 minute
Coat the beef cubes lightly with flour by shaking them together in a freezer bag
Add the beef and Garlic and cook for 8-10 minutes or until browned
Remove to a plate for a few minutes while you do the next step.

Add all of vegetable ingredients (except for grated carrot) to Actifry and drizzle with oil
turn Actifry on for 15 minutes

After 4 Minutes add the beef and carrots and beef broth
Let this cook for a few minutes and add some broth/starch mixture. Adjust as you cook for proper consistency.

Cook until your happy with how it looks and serve with rice or pasta

This is the 3rd time I used my Actifry, my veggies were a bit overcooked because I cooked them longer than 4 or so min, but this turned out fantastic, with ingredients I had handy.
It doesn't really matter the ingredients, be inventive, add spices as you like, and cook to the proportions you are using, this Actifry is the most amazing appliance for making nutritional meals.
I've been cooking for over 30 years and have not made a stir fry better than this without using a wok and cooking like Yan Can Cook, and I barely had to tend to this meal cooking.
