Ingredients

• 600 g (1 lb 5 oz) beef steak (such as topside, rump or fillet), cut into bite-sized pieces
• 1 onion, thinly sliced
• 2-3 cloves garlic, finely chopped
• 1 spoon (peeled) fresh root ginger, finely chopped or cut into thin strips (about 10 g/1/4 oz)
• 4 tomatoes, chopped
• Salt and freshly ground black pepper, to taste
• 2 spoon light olive oil
• 500 ml (18 fl oz) cold water
• 400 g (14 oz) small salad potatoes, such as charlotte, juliette or asperge (peeled, if desired), cut in half lengthways
• 1 spoon cornflour
• 1 spoon tomato purée
• 25-55 g (1-2 oz) wild rocket (optional)

Cooking Instructions

Place the beef in the ActiFry pan with the onion, garlic, fresh ginger, tomatoes and seasoning. Drizzle the oil evenly over the top. Cook for 5 minutes.

Add the cold water to the ActiFry and cook for 15 minutes.

Add the potatoes to the ActiFry and cook for a further 20 minutes. Stop the ActiFry once or twice during cooking and stir the mixture using a wooden spoon or spatula.

Blend the cornflour with a little cold water in a small bowl. Stir in the tomato puree. Pour the cornflour mixture evenly into the ActiFry and stir in. Cook for 5- 10 minutes, or until the sauce is thickened.

Stir in the rocket, if using. Serve with cooked fresh vegetables such as broccoli florets and baby carrots.

i thought this sounded quite nice, so followed to the exact measurements, next thing i know puff the actifry starts smoking and stops, so had to finish off in a pan, had an awful burnt taste due to the actifry problem, obviously serves me right for being more adventurous then scampi and chips Left by: joanne (1 Oct 2012)

Yeah like others if you follow the instructions it's not good at all! Flavour is ok but undercooked potatoes and overcooked beef! So take note of the others ideas and use your instincts! Left by: Alice (17 Nov 2011)

The beef used was Angus Top Sirloin medallions.. very tender.. cornstarch, 1/4 actifry spoon oil made it taste excellent. Removed the beef after browning added ginger on top and put off to the side.. Potatoes.. were definitely undercooked but they went in next with tomatoes water garlic tomato puree onion thinly sliced and chopped with oil. This (aside from the potatoes) actually came out tasting great.. the wet ingredients sauced up thickly and nicely. However much like the rest of the comments on here.. the potatoes definitely needed to be precooked. Had to toss the entire meal cause of this or rather had to reserve the beef and remade the dish later with precooked potatoes. Everything turned out great.
so to note.. precook those potatoes. Might be able to use canned potatoes.. I used fresh white baby potatoes. and the definitely required a precooking.

this is the first reciepe I did in my actifry and it came out fantastic, even my Dad ate it and he soesn't like spicy foods!!

yummy recipie and goes well with fresh carrot and broccoli or cabbage. only thing i would say is pre-cook the potatoes otherwise they come out very hard indeed/ Left by: flynns (18 Sep 2011)

David, I always cube the potatoes, and don't put the beef in until half way through cooking. I put in 0.7L of water, also. Left by: Victoria (23 Aug 2011)

Tried the Madagascan beef to the letter. Absolutely awful, the beef was grossly over-cooked and the potatoes well undercooked. The 0.5L of water completely dissapeared. I real;ised with hindsight that its not possible to cook potatoes albeit small in the Actifry in 20 minutes, also 50 minutes for the beef is obviously incorrect. Comments would be appreciared.

Very Tasty.... not sure I'd bother adding the rocket next time though. I will also cook the potatoes for 5 mins longer, or cut them into quarters not half. Will definitely make it again. Left by: Karen McAllister (20 Jul 2011)

I've done this a few times now and find that if you cut the onion really thin they cook better as we don't like raw onion and thicker slices don't cook to soft. (Hope that makes sense) Left by: Carl 05 (12 Jan 2011)
