1 onion, cut into wedges
1 carrot, sliced thin
1 celery stalk, sliced thin
1 red pepper, chopped
1 yellow pepper, chopped
1 actifry spoon vegetable oil
2 actifry spoons oyster sauce
1 teaspoon sesame oil
1/2 teaspoon ground ginger
1 pound medium to large cooked shrimp
Place the onion, garlic, carrot and celery in the actifry and drizzle with vegetable oil; cook for 7 minutes.
Mix together the oyster sauce, sesame oil and ginger in a small bowl and pour into actifry.
Add the peppers and cook for another 5 minutes.
Throw in the shrimp and cook for another 5 minutes.
Serve alone or with white rice.

If you want to make the healthiest choice for the vegetable oil, make it coconut oil, for coconut oil is always burned off and never stored as fat. I don't like the taste at all of coconut, so I use the coconut oil that has the aroma removed. It's readily available in health food stores, and has a very clean taste.
Even more importantly, coconut oil is the ONLY oil that is safe to be cooked at a high temperature without breaking down into a form that is not healthy for us to eat.
So consider coconut oil for your health, AND for your waistline. I've made changes in my diet, and have lost 3 1/2 inches off my waist and 3 inches off my hips in 12 weeks. NO exercise (I'm dealing with a chronic illness, the occasional walk is the best I can do...).
