Firstly, cut up your chicken. Then, combine four tablespoons of smash flakes in a bowl, add half a teaspoon of salt and half a teaspoon of pepper, along with half a teaspoon of garlic granules/garlic salt.
In another bowl, whisk your egg and add a splash of soy sauce to season.
Pop your chicken chunks in the egg and then dredge in the seasoned smash mix. Once this is all done, arrange on a nonstick baking tray, sprayed with some Fry Light first. I used my actifry for the chicken but the oven would work fine as well.
I cooked the chicken for 15 minutes, stopped the actifry, flipped them around, added more Fry Light and let them go for another 10/15 minutes.
During this time I would gently soften my peppers and onion and added some soy sauce. I like soy sauce so I just put a good amount in.
Finally, together two teaspoons of your sugar/sweetener/honey (the choice is yours here) with two tablespoons of white wine vinegar and stir until the sugar has almost dissolved. Add this to the pan and stir on a gentle heat. Then that’s it, you are done. Simple yet so tasty!
I served mine with potatoes but do rice as well
