Latest RecipesAs My Patatas Bravas AF recipe seemed to be quite successful, I thought I'd experiment with another of my favourite potato recipes. After a little trial and error, the following seems to produce some very tasty results (last consumed this very lunchtime) which is sufficient for two generous helpings.
400g potatoes
1 medium onion
1 clove garlic
Approximately 100g of chopped tomatoes (around a quarter of a large tin - just enough to make a curried paste without the tomato flavour dominating the potatoes)
1 teaspoon turmeric
1 teaspoon cumin
OR, if you don't have those spices, you can get away with two teaspoons of generic curry powder.
1) Chop the potatoes into roughly dice-shaped chunks.
2) Rinse well and pat them dry with kitchen towel.
3) Put them into the Actifry tray, drizzle one spoonful of olive oil over them and cook for 25 mins.
4) While that's going on, finely chop the onion and garlic and add to the chopped tomatoes, along with the turmeric and cumin (or curry powder) and mix well to make the curry sauce.
5) When the Actifry has completed the 25 minutes, open it and spoon the curry sauce mix evenly over the potatoes. Actifry for a further 8 minutes, then serve immediately.
