4 medium sized tomatoes (chopped)
100g mushrooms
1 tin red kidney beans
chopped onion
1/2 tin sweetcorn
3 tbsp tomato puree
tsp chilli flakes (optional but makes it hot)
vegetarian stock cube
low cal cooking spray
medium sized courgette (chopped)
water as needed
200g soya mince (Quorn or supermarket meat free mince range) - leave to thaw out for 10 mins before cooking to loosen clumps.

Cooking Instructions

Spray ActiFry pan with oil and put in tomatoes, onions, mushrooms, courgette, sweetcorn and kidney beans. Cook for about 10 mins.

Pour in a cup of warm water, puree, chilli flakes and sprinkle in stock cube. Place mince in the pan, making sure it's defrosted slightly.

Add more water if needed

Let run for about 15-20 mins until cooked through.

Can be used as a filling for jacket potato, a topping for pasta or rice. Topped with grated cheese before serving is delicious too.
