Marinate Meats: In a bowl, combine chicken and pork with soy sauce, Shaoxing wine, cornflour, sesame oil, and egg white (if using). Mix well and set aside for 10 minutes (or up to 30 mins if time allows).
Preheat Air Fryer: Set to 200°C (390°F) for 3 minutes.
Cook Meats: Lightly brush or spray the air fryer basket with oil. Add marinated meats in a single layer. Air fry for 8 minutes, shaking halfway. Transfer to a plate.
Cook Veg: Add peppers, baby corn, and spring onions to the basket. Lightly spray with oil. Air fry at 200°C for 4 minutes until crisp-tender.
Make Sauce: While veg cooks, whisk all sauce ingredients in a small bowl.
Combine & Glaze: Return meats and veg to the air fryer basket. Pour sauce over. Air fry for 2 minutes at 180°C (350°F) just until sauce thickens and clings to ingredients.
Serve: Spoon into bowls and serve immediately with steamed jasmine rice or noodles.
